We shipped granular checkout elements in Breakdance 1.1 that will allow you to create entirely custom checkout pages.
We also did the same for the WooCommerce cart.
For specific requests that go above and beyond what is possible with the granular checkout elements or granular checkout elements, please open a new issue so people can vote on that.

Well, when it comes to looking at the good examples, it's worth following FunnelKit (recently rebranded from WooFunnels) and CartFlows. I've been using WooFunnels with Elementor for a while - I can easily create a multistep layout, ad section and fields in each section. This way, it's very easy to create a checkout suitable for respective industries (in my case, ordering food from resturants)

To start, we're going to provide individual elements to build the checkout page - i.e. instead one single element for the checkout page, you will also be able to create a checkout page by combining individual elements - i.e. billing form, shipping form, payment form, order totals table, coupon form, etc.

The fields must be customizable, because different countries have different sets of fields. For example, we in Ukraine do not use most of the fields, only (name, phone number, post office number) For each country is different regional preferences.
